Hearty, rustic and delicious. Hoto - Miso Noodle soup is from Yuki’s home province in Japan, Yamanashi. The dish is a well known regional favourite and uses local miso with a flavourful dashi stock. Perfect for pumpkin season, get cosy and warm yourself up this Autumn by making this simple vegetarian dish with Yuki.

Join our wellness cookalong this October, at Yuki’s Kitchen with Yakult.

This is a one-dish class, focusing on Hoto Miso Noodle Soup. It’s a wonderful Autumnal dish, in which Kabocha Pumpkin (or Butternut Squash as an alternative) play the lead role. Traditionally, a specific ‘Hoto’ noodle is used in Yamanashi, but we’ll use Udon noodles, which are easier to find outside Japan. Hoto is full of goodness, very warming and pleasing to make as the nights draw in.
